I've owned a good many of those mentioned, shot many of the rest and like Snag, I've found my bow. Most important, shoot everything you can get your hands on. I'll bet, sooner or later, you'll have one that stays at the top of your list against all challengers.

I love these threads though only getting to chose three is a little limiting!  I think every bow is capable of shooting well enough to harvest game if tuned properly and time is put to itto learn it's "personality".  That said, I love the history adn story behind our weapons of choice adn my short list is as follows:

1) Paul Schafer Recurve.  I am a prety die-hard long bow guy, but to hunt with a bow that passed through Paul's hands would be magical.

2) A shorter Sky Trophy longbow.  I love my 69" model, but standing 5'9" and drwing 25", I would prefer something around 64"

3)Byron Schurg Aspen Elite aroudn 60 pounds at me draw.  Shot one once, loved it, should of bought it.

I have never bought a custome made brand new bow.  Never had the money when Earl was alive, but am sure glad I was able to track down an original Sky Trophy.

I've found my dream recurve, a DAS 21" Naki black anodized, medium Winex limbs for an overall length of 64".  
This one draws around 55#@30", but I may go heavier in draw.
The Schafer Silvertip recurve I had was the best wood riser recurve I've shot.
Hopefully the 2 longbows I have on order will be my dream longbows:
Turkey Creek Double Carbon, 64", 65#@30" Cocobolo riser with wenge flared accent stripe, hickory limb cores
Northern Mist Superior, 66", 65#@30", Bolivian Rosewood riser and american elm limbs.
