Inspired by the "Meat" thread, I thought a few favorite recipes might start the mouth watering & provide some hunting incentive. Why not share your favorite.
Growing up on the farm we had deer often (never too often for me). Big Mama would pound venison steak flat, pepper & batter it to perfection, and deep fry to golden brown. That high stacked meat platter pile of vension disappeared quick! Never ate roasts until much later as they were too gamey. The following recipe will produce a roast like never before.
Need;
(1) 3-5# venison roast seasoned to taste
(1) pkg onion soup mix
(1- 1&1/2) cups brewed black coffee
Flash sear roast on all sides in skillet. Put into crock pot set to slow cook and cover with water to about 1" above. Add soup mix & coffee. Cook (overnight) 10-12 hours and serve in a bowl over rice w/buttered french bread backup. Tossed salad to your preference and dark heavy beer turn this into a dinner to remember. Not a hint of wild (nor coffee) taste. *You might try much less coffee if you like a wild twang. My friends & relatives don't. They also don't know they've just eaten deer meat.
