I've got the trout/bird model. Figgered it would be a handy size for deer, even with my large hands. Didn't get a deer. But I whacked a cottontail recently. Worked just dandy boning out the backstraps, and lotsa "backbone" to chop the legs off too. Good steel, nice rosewood handle slabs, beefy leather sheath. The regular grind should be fine. I think they recommend the flat grind more for camp use. Depending what you want to use the knife for, the #1 or #2 will be great for deer-size critters and under. I bought the #1 in a folder for a buddy who hosted me deer hunting several times. It's sturdy, great quality. I've seen a coupla their larger models. They look beautiful, but to me they are like cleavers. Maybe some have a use for that.
