There are some guys I know who love to eat Javelina, but the majority of hunters I know have no desire to eat them. Javelina's have a musk sack on their back which, if damaged, will ruin meat, clothing, future dates etc. If you hunt with an outfitter they should be able to dress it without issue.

btw, my friends typically make them into sausage or do green chile burros with their javi's, I have tried both and they tasted great to me.

Man I wish. Javelina are the one critter that I would love to hunt over all others. Can honestly say I would pick em over a trip to Africa. Must be nuts!

the rancher we hunt on told us to use two knifes for dressing them first use one of them to cut scent gland off then use the other to dress and clean
