Supposedly, you can make a pretty tasty chowder out of mudfish.  The only time I tried cooking them, one bite was more than enough to convince me I wasn't very hungry.  A real strong and muddy taste and a texture like having a mouthful of cotton.  They have rudimentary lungs, so can actually breath air, out of the water, for a period.  If they come from a place that all but dried, that may be the cause for the muddy taste.

Love it. Caught one with an old friend when I lived in Indiana. Told the story to my old fishin and huntin buddies in Nebraska. They thought I was telling a whopper    In all my days, I'd never seen one. Thought old Tyler was pulling my leg when they started the yarns on dogfish.
But then again when I started telling stories about wipers, them boys thought I was strait out stretchin it.
Nice Mount. I could live in that guest room.
