The day I stop getting "amped" from hunting is the day I take up knitting...may that day never come.
Embrace the excitement, let it wash over you and through you...enjoy it. Life's too short not to savor the rush you get from being close to an animal.
Eventually, you will learn how to enjoy it...then control it so you can make the shot. IMHO, that only happens through lots of encounters. Like Dave and others suggested, the best way to learn how is to take small game first, then med game, then deer sized game. The more successful shots you make, the easier it will get...but make no mistake about it, I don't think it ever goes away and still hits even the most seasoned heros of our sport from time to time.
