Great job on staying with him! I think the skull mount is cool for bison! Great choice.

Also....

When you marinade the meat, don't just do it overnight. Let it sit in an acidic marinade for 3 days and it will fall apart. Vinegar, oil and spices or Italian salad dressing as mentionad before will work great.

They are a lot of work to butcher up, I've helped my neighbor a bunch on his farm where he raises them.
