Just made a frittata of sorts with , hog sausage, peppers, onions, mushrooms, redskins, and cream cheese, baked with cheddar, Good eating for sure. Have also fried it up with taco seasoning, peppers and onions, and made soft tacos with it, always the old stand by of bisquits and sausage gravy. Todd

I have used it for everything in the past, and future for that matter.  I love it in chili, lasagna, patties, spaghetti and even mimed with beef to make meatloaf.  Almost endless ways to use it.

Marinade very thin sliced chicken breast in Tabasco sauce and grill it along with a couple of pineapple slices. Crumble the sausage and fry it in a pan. When done cover the chicken with the sausage and pineapple and cover the all of it with melted Mexican cheese sauce.

I made stuffed acorn squash with  a spicier variety of pork sausage. I thought they were good.

Let us know how you make out.

Good ideas.  I like to use spicy sausage in chili and meat loaf.  My favorite use for it, though, is to make up a big batch of sausage gravy (half hot sausage, half breakfast sausage) to eat with biscuits or over mashed potatoes.  Great breakfast up at deer camp!

Jack,  take your sausage, peppers, onion, mushrooms and fry them up together, drain and put in a glass 13x9 baking dish [ spray it with Pam ] add chunks of cream cheese spoon sized, and diced up boiled potatoes, pour a dozen scrambled eggs over it and top with shred cheddar cheese, bake at 350 for a 1/2 hour, feeds 4-6 depending on appitites. I almost forgot another standby for us is patty it out in a huge patty and eat it on a hamburger bun with mustard.

Fry Your sausage drain then mix with cream cheese. Half a bunch of Jalapeno peppers stuff with mixture. Then wrap in bacon either cook in the oven or on the grill til bacon is done.

Drizzle with sweet hot bar-b-que sauce.
