Arrow selection charts, like Easton for example, have you choose a point weight. Should you include your insert weight also? If I pick 125gr, my arrow would really be 50gr brass insert + 75gr point? Thanks guys!

Yes, if it says 125 grain point and you use a 50 grain insert and 75 grain point it will be close. I would suggest though looking at stu miller's spine calculator. Usually it will get you pretty close if you have everything entered correctly.
