I used it as the base for a marinade and baste today along with some teriyaki, Allegro marinade, Stubb's pork marinade and Apple Wood Rub.....

Sautée onions in butter to the point of carmelizing. Add a bit of red wine to deglaze the pan, and some elderberry jelly. Simmer a little with a spoonful of flour, de-lumped. Serve as gravy over game and mashed potatoes.
I always take berry or whole cranberry jelly to camp. Homemade makes it taste better.
