Both are good!  Sitka tends to be lighter overall and DF heavier.  Either one is MUCH stronger than POC.

I shoot doug fir, but you can't go wrong with either choice.  Both make fine arrows.

I like both..they are my favorite two woods.  I prefer DF as it is a bit denser than cedar and the sitka is a bit lighter but both seem to last me much longer without breaking on errant shots.

I like the looks of the DF when stained better...but both to me are superior to cedar for my uses hunting.

Both are great shafts, comes down to how heavy an arrow you want.

Most has been said above . . . my experience:

DF will be a little more tough, better grain when staining, heavier, tend to come a little more straight than than the SP.

SP will be a little lighter in weight, in my experience a little more tough than POC, stains a little better than POC, comes a little more straight than POC

for me, the shaft has to balance well with a moderate weight broadhead....not this foc, efoc stuff....so,

for a heavier overall shaft, DF is real nice, for a lighter overall shaft, closer to cedar in weight, SS is real nice too.  I've shot game with both, FWIW, I shot a moose at over 65 yards with SS, hunter's head BH, total weight of 575 gr. and got super penetration.  I like the flatter trajectory of the lighter shafts and on No. American game penetration isn't a problem.

IMO,
If you shoot 55lbs or under the SS is fine but over 55lbs,the durability of DF wins hands down.
The ultimate wood shaft is any wood w/ a good footing like osage, purpleheart, ect, ect. There was a guy name Kye on here that made wonderful footed shafts.Pricier than plain shafts but the looks and stregnth more than make up the cost.

I prefer DF for it's straightness and durability.  Nothing beats the smell of POC when it does break (frequently) though..

DF is denser and tougher than SS.  For speed, go with SS, for hard-hitting toughness, go with DF.  Both will make fine arrows.
