Doesn't matter in my case, because I have it all turned into smoked summer sausage at a local Amish community. I hunt a few limited-access places where it would be nice to know how to do it in the field.
Deboned completely Sir. Mr Warren Womack turned me onto field quartering instead of dragging. I've seen videos on field quartering but none on deboning. I just couldn't see packing them bones out so I took it to the next level. I cut the deer from tail to the head up it's back while it's laying on it's side. Then I peel the hide back on the hind quarter, split the quarter along the femur taking each half off the bone while still connected. I peel the shoulder hide back, bedone it. Cut backstrap out, trim neck meat and flip the deer over and repeat.
I'll never drag another deer out the woods!
