Just keep both sides even. Some BHs have a really good grind to begin with so it's easy to count strokes if you like. Other BHs have a poor,uneven,course grind and so I always start on the waek side and by the time your burr is good then some finer work on the originally better side about makes both sides symetrical. Now is time to count strokes for final honing and finished edge work.
