Thanks guys I really appreciate it. Been working her up all morning.

Now I know this is a Deer hunters law that is broken but my daughter loves jerky from the backstraps so what's the father of the year supposed to do???

A good soaking in a dark stout for two days. Then for a day in a teriyaki marinade and off to the dehydrator.

Those look like  pretty thick cuts.  Do they go in the dehydrator  as is?

Somebody does some very nice knife work on the sinew and silver skin.  I use a Rapala fillet knife and/or a Victorinox boning knife, but mine don't look that good.  I've heard it's easier to remove when semi-frozen?  Is that your secret?

She was a nice one. That back strap looked good.
