Does anyone self video their hunts?  If so, what type of camera do you suggest for someone just beginning?  Do you have any hunt video that you can post or link to?

Here is mine from last season.  It's in 6 parts....and a lot to watch.   This was my first attempt.   I mostly used a Nikon Coolpix S9500 for most, but also used a GoPro a bit.   I learned a lot, and hope to do better this year.  I had a bunch of fun filming.....

Here's a short clip of my hog hunt last week taken with a Kodak ZX3 waterproof camera. Very small and takes HD video
 
I also have a Canon HF-R300 that I use.

I use a cheap camera arm and a jvc everio.  It takes pretty good footage. Here is a coyote I managed to get last year.

 

As far as which camera to get, this side of $500, there aren't any production quality cameras.  The most important 2 features you want are focus and its ability to shoot in low light scenarios.  I really want a camera with an external focus and an external light adjustment(i think it is called exposure).  

IF you don't have a lot to invest like myself, it really wont matter which one you buy, theyre all basically the same.  I have heard great things about a sony action cam.

Great videos guys.   I think what you need to do is decide what you want to film...if you are telling a story, highlighting wildlife, or capturing the kill shot.   Different cameras will perform better in different circumstances.  GoPros are great, but they have their strengths and their limits.   Most cameras are capable of HD video nowdays...it's all about their ease of use, optic limits, and durability.  You don't have to spend a ton of money (like anything) to get results.   Most good videos are done in the editing stage anyway!
